Zesty Quinoa Salad

I am a big fan of making large salads like these and having handy for the next couple days as they’re simple to make and perfect for meal prepping. Plus, these salads are a great way to get a lot of fiber into your diet which helps support optimal gut health!

These are also very versatile. You can use wild rice, brown rice, quinoa or virtually any other grain to your liking and choose any fix-ins of choice. For instance, select a few veggies, dried fruits, and perhaps diced apple and nuts. Combine everything together, add a little sea salt and lemon juice and you have a simple and tasty salad you can mix in with greens or even use as a stuffing for baked chicken or pork chops.

INGREDIENTS

  • 2C quinoa, cooked + cooled

  • 1C broccoli, chopped

  • 1/2C cherry tomatoes, sliced

  • 1/4c black olives, chopped

  • 1/2 green apple, chopped

  • 1 red pepper, chopped

  • 6 radishes, chopped

  • 1 avocado, chopped

  • 1/4c dried currants

  • 1/4c slivered almonds

  • 1 lime, juice + zest

  • 4TBS cilantro, chopped

  • 1TBS oregano

  • 1/4tsp cumin

  • 1/4tsp sea salt

  1. Combine all ingredients into a mixing bowl and toss until ingredients are well mixed. Enjoy!
