Broccoli Bacon Salad

I am a big fan of making large salads like these and having handy for the next couple days as they’re simple to make and perfect for meal prepping. Plus, these salads are a great way to get a lot of fiber into your diet which helps support optimal gut health!

INGREDIENTS

  • 2C broccoli, chopped

  • 1 red pepper, chopped

  • 4 radish, chopped

  • 1C bacon, chopped

  • 1/2C peas, thawed

  • 1/2C tomatoes, sliced

  • 1/2C homemade mayo

  • 1/2c cashews, chopped

  • 1/4tsp sea salt

  • 1/3C olive oil

  • 1 lemon, juice + zest

  1. Combine all ingredients into a mixing bowl and toss until ingredients are evenly coated and mixed. Enjoy!
