Creamy Avocado Kimchi Dip
This recipe turned out better than I had anticipated; in fact, I could not stop eating it and had to make a second batch! Adding avocado is a genius idea for any dressing as they create a super thick and creamy consistency which makes for an amazing dip, sauce, or even spread for sandwiches! I developed this version from my Herbed Avocado Dip recipe I posted a while back but instead added some extra ferments to make it more gut healthy. For instance, here I added miso and kimchi, two ingredients people may not be too fond of eating by themselves but when blended in this delicious dip the flavors combine for a sweet and savory sauce! INGREDIENTS
- 1-2 Avocados 
- 1TBS miso paste 
- 1/2tsp Nama Shoyu soy sauce 
- 1tsp honey 
- 1tsp ginger, grated 
- 2TBS kimchi juice 
- 4TBS olive oil 
- 4-5 basil leaves 
- Combine all ingredients into a blender and blend until smooth.
