Spicy Sauerkraut Slaw

I am a big fan of adding ferments into the diet because they help repopulate the gut with beneficial organisms but also can aid in digestion when added to meals. Ferments were an instrumental part of my diet in healing from Lyme disease but I found that incorporating plain old sauerkraut every day quickly became a little boring which is when I started making them into slaws like my Fennel Apple Kraut Slaw or my Cucumber Kraut Slaw.

These slaws are incredibly simple to prepare and taste great paired with my Herb Farro Salad or Curry Farro Salad but even are perfect topped with burgers or in fish tacos. Hope you enjoy!

INGREDIENTS

  • 1C sauerkraut

  • 1C green cabbage, chopped

  • 1 jalapeno, diced

  • 1 green apple, spiralized

  • 6 radishes, thinly sliced or spiralized

  • 3TBS cilantro, chopped

  • 1TBS oregano

  • 1/4tsp celery salt

  • 1 lime, juice + zest

  • 1/4tsp sea salt

  1. Combine all ingredients in a mixing bowl and toss until well combined.
