Prime Rib is the perfect holiday recipe! I made a simple marinade with oil, garlic, and fresh herbs then coated the prime rib and roasted in the oven. Simple and delicious!

INGREDIENTS

For the marinade:

  • 1/4C Olive Oil

  • 4 cloves garlic

  • 1tsp sea salt

  • 1/2tsp black pepper

  • 2-3TBS Thyme

  • 2-3TBS Rosemary

  • 2-3TBS Oregano

For the Prime Rib:

  • 1 yellow onion, chopped

  • 1 sweet potato, chopped

  • 4 cloves garlic, chopped

  • 4 medium carrots, chopped

  • 3 stalks celery, chopped

  • 2-4 cups Beet & Sweet Potato Bone Broth

    1. Allow prime rib to sit at room temp for about an hour.

    2. Preheat oven to 450*F then pat dry with a paper towel.

    3. Season with sea salt and pepper on both sides then prepare marinade by blending all ingredients in food processor.

    4. Thoroughly coat meat in oil mixture on both sides.

    5. Add chopped veggies to bottom of roasting dish.

    6. Fill roasting dish with bone broth until it covers about 2-inches.

    7. Place meat on roasting rack in roasting dish bone side down.

    8. Roast for 20 minutes then turn heat down to 350*F and continue to roast until internal temperature is 125*F or about 1.5 hours depending on size of roast and oven.

    9. Remove from oven and allow roast to sit at room temperature, covered in foil, for another 20 minutes allowing it to continue to cook.

    10. Remove foil and serve!
