Peach Nectarine Salsa

I am lucky to live in the Grand Valley in Colorado which is home to some of the best peaches! During peach season, I am always looking for ways to incorporate them into recipes, like my Peach Cobbler, a healthier take on the traditional peach cobbler recipe that can be served with ice cream for a sweet treat or even on top of oats or yogurt.

My Peach Nectarine Salsa is an awesome topping to Grilled Pork Chops as seen in my cooking demo below. It also is perfect on top of salads, burgers, or in tacos. The perfect summertime salsa!

INGREDIENTS

  • 2C peaches nectarines, diced

  •  1 red pepper, diced

  • 1/4C red onion, chopped

  • 1/2 C cilantro, chopped

  • 1 jalapeno, chopped

  • 1 Lime, juice + zest

  • Pinch black pepper

  • 1/4tsp sea salt

  1. Combine all ingredients into mixing bowl and mix well.

  2. Serve alongside grilled pork chops or scoop up with my Chickpea Crisps!
