Oatmeal Chocolate Chip Cookies

My healthier version of the traditional oatmeal chocolate chip cookie is made with only a few whole ingredients and is dairy and gluten free! Simply blend oats, nuts, seeds, dates, and spices then bake and devour. Enjoy!

INGREDIENTS

  • 2C oats

  • 1/3 hemp seeds

  • 1C dates, soft

  • 1C walnuts

  • 1/2tsp cinnamon

  • 1/3C oil (I used high oleic sunflower seed oil but you could also use coconut oil)

  • 1/4C maple syrup

  • 1/2tsp vanilla extract

  • 1/2tsp almond extract

  • 1//4tsp sea salt

  • chocolate chips to taste

  1. Preheat oven to 350*F and line a baking sheet with parchment paper.

  2. Combine all ingredients in a blender or food processor until it starts to form into one big mass.

  3. Add in chocolate chips and pulse until combined

  4. Form batter into balls and place onto baking sheet, pressing firmly on each mound of batter to flatten into cookie shape. Repeat and space cookies about 1-inch apart.

  5. Bake for only about 5-7 minutes, depending on oven, then remove from oven and place parchment paper with cookies on table top.

  6. Allow to cool for at least 15-20 minutes until firm or place in the refrigerator. Cookies firm up the longer they rest on counter or overnight in refrigerator.
