• 1LB chorizo

  • 1LB ground pork

  • 3 cloves garlic, minced

  • 1 duck egg (or 2 chicken eggs)

  • 1/2C Basil & Arugula Pesto

  • 1/2tsp red pepper flakes (optional for a little added heat)

  • 1/2tsp sea salt

  • 1/4C almond flour

  • 1TBS basil

  • 1TBS oregano

  • 2TBS grass-fed butter

  • 3-4C marinara sauce

  1. Preheat oven to 325*F and line a baking sheet with parchment paper.

  2. Combine all ingredients (except butter and marinara) into a mixing bowl until thoroughly mixed.

  3. Form tiny meatballs and place on baking sheet about 1/2 inch to 1 inch apart.

  4. Bake for about 25 minutes then remove from oven.

  5. In a large pot, melt butter and over medium heat, fry the meatballs until each side is golden brown (about 2-3 min each side).

  6. Add marinara sauce and bring to boil then immediately reduce to simmer for about 8-12 minutes until meatballs are cooked thoroughly.

  7. Serve garnished with Parmesan cheese and parsley or alongside spaghetti squash. Enjoy!
